I have a dual core system, 4 gigs of ram and 8800gtx vid card, and when I run two instances of Everquest, the first one will freeze after about 5-10 minutes of play. The other instance started works fine and continues to play. Not sure what the problem could be.

He didn't cut out the EQPN information, he has EQPlayNice disabled.
So you had disabled the options that are there to help protect you from overheating problems (both CPU and video), as well as CPU saturation...
The first thing I would do is update your video card drivers, they appear to be out of date. Your second sysinfo indicates that your system RAM is about 100MB free. It wouldn't surprise me if you're running out of physical RAM and seeing problems as a result of it, and it also wouldn't surprise me if you're having overheating problems, aaaand it wouldn't surprise me one bit if it's simply a driver issue.
You can help resolve heat issues by enabling EQPlayNice, but if it's due to overheating, permanent unrecoverable damage may already be done to the overheating components.

Well, I know for a fact my system isn't overheating. My cpu under full load runs about 95 degrees F. My vid card running about 150F. As for the free mem, With 4 gigs of ram, if I can't run two instances of EQ without filling up my ram, then there is a problem somewhere. Running an instance of EQ without wineq2 takes up about 40% of my memory (includes all the system files etc). As for the video driver, I'm running the latest one from nvidia for the 8800.

With 32bit operating systems, the maximum amount of addressable memory is 4gb. From that 4gb you subtract any motherboard resources that need mapped out, you also subtract your video card memory.
So yes, you can certainly put 4gb of ram in a lot of computers out there, but the 32bit operating systems out there can't use the full 4gb as ram because of its own limitation. If you want to be able to use 4gb of ram, move to a 64bit OS.

About the RAM, all you have to do is take a look at the numbers. Your first sysinfo.txt has 1378/3327MB available, and your second has 112/3327MB available. I imagine you have something other than EverQuest running as well, so that's likely to be what's "wrong".
When something runs for 45 minutes and then breaks, it's usually hardware related unless there's a memory leak, which there's not in WinEQ but may be in EverQuest.
I don't imagine it would work any different if you ran 2 EQ sessions without WinEQ. But you're the expert.
